Japanese smelt
Japanese smelt is a fish of smelt family living in cold northern seas and freshwater lakes. It is distinguished by its small size and silver scales, which turn gold-brown when fried. Japanese smelt has a tender meat, rich in proteins, beneficial fatty acids and vitamins, such as vitamins of the B and D groups.
It is a coastal schooling fish up to 25 cm in size. It is endemic for the north-western part of the Pacific Ocean. It lives near the shores of Sakhalin, the Kurile Islands and along the shores of the Sea of Japan.
